Ethiopian naturally processed coffees are among the most flavorful and exotic in the world. These are also called sun-dried coffees and tend to have fruitier, more surprising flavors than washed coffees. (Kind of like the difference between ales and lagers in the world of beer). The Banko Gotiti Cooperative in the southern district of Gedeb, Ethiopia, is a member of the Yirgacheffe Coffee Union and produces extraordinary old heirloom varietals. Beans are roasted on the lighter side, imparting just enough roast to complement their delicate floral character.
